That depends entirely on your particular build and what you have set up. Are your servos rated for 12 or 5 volts? Are you connecting the Arduinos directly to this power supply via 5V or are you going to use the barrel jack (which can handle up to I believe 12V but it will increase heat output substantially going that high)? Do you have a Raspberry Pi or are you using a tablet/ mini-ITX? In general 11.1V Lipo would be fine, but you would need to do voltage regulation to bring down to a steady 5V for more sensitive components.
